When you don't have
much time but want something pretty tasty, this recipe might just fit the bill. Start by grilling how ever many
chicken breasts you need to feed your brood. They can be grilled on a charcoal or gas grill, stovetop grill, grill
pan, or even a Foreman-type grill. Once the chicken breasts are done, slice them across the grain, and toss them
into a sauce pan with enough of your favorite bbq sauce to barely cover them up. Simmer the sauce and chicken (with
the lid on) for at least 20 minutes, giving the sauce time to infuse the chicken. I have allowed it to simmer for
as long as an hour or so. The longer it simmers, the better the taste and the more tender the meat. Being from
Eastern NC, I prefer vinegar and red pepper based sauces (aka "downeast" bbq sauce), sometimes with a
squirt or two of ketchup to add a little sweetness and to cut the heat. Enjoy!
