This recipe came from Mad Coyote Joe, host of The Sonoran Grill, as seen on TV in the Southwest.
1 lb. medium shrimp, peeled
5 cloves garlic
5 black peppercorns
2 chilies (Arbol)
3 Tbl. butter
1 tsp. coarse salt
Crush the garlic and salt in a *mortar and pestle and grind to a paste. Then grind in the black pepper, and
Chile de Arbol. Set aside. Melt the butter in a medium sauté pan until it is bubbling, but not browned.
Add the shrimp. Sautee until almost done, then add the garlic mixture. Continue cooking until the shrimp are done
and the garlic has fully cooked. Serves 4.
*Using a mortar and pestle makes a big difference in the taste. The mortar and pestle crushes and releases the
flavors, while a mechanical device does nothing more than chops up the ingredients.
