My mom's aunt lived in the upstairs of our home back in the 1960's. Every year, between Thanksgiving and Christmas,
she would spend most all her non-working time in her kitchen, baking cookies and making delicious candies to be
shared with the people she loved. It sure was a test of my sister's and my patience waiting for all those goodies
to cool before we could sample them! The aroma wafting from her kitchen was different every day, depending upon
what she was making. Needless to say, some of my fondest Christmas memories involved my nose. The following recipe
was one of my childhood favorites, one that Aunt Annie put together superbly.
3 cups light brown sugar
1/4 teaspoon salt
3/4 cup of water
2 egg whites
1 teaspoon of vanilla extract
Put the sugar, salt, and water in a saucepan and stir until dissolved. Once dissolved, cook on medium (more or
less, depending upon your stove) to 255 degrees Fahrenheit. Do NOT stir while it's cooking. While this is cooking,
beat the egg whites, in a bowl, until fluffy. As soon as the temperature reaches 255, take off the heat and pour
slowly into the bowl containing the beaten egg whites, continually beating while pouring. Continue to beat, adding
the vanilla about halfway through, until the candy becomes cool and stiff enough to keep it's shape. Once it's
stiff enough, spoon onto a wax paper lined tray. Allow to cool to room temperature, then, ENJOY!
